Broccoli and Cauliflower Curry with Coconut Milk

Ingredients
- 250 g Broccoli
- 250 g Cauliflower
- 2 tsp Curry powder
- 400 ml Coconut milk
- 2 tbsp Oil
- 1 piece Onion
- à volonté pinch Salt and pepper
- 150 g Rice
Instructions
Step 1
Start cooking the rice according to package instructions.
Step 2
Cut the broccoli and cauliflower into small florets.
Step 3
Slice the onion thinly.
Step 4
Sauté the onion in a pot with oil for 2 minutes.
Step 5
Add the curry powder and mix well to flavor the oil.
Step 6
Add the broccoli, cauliflower, and coconut milk.
Step 7
Simmer for 15 minutes until the vegetables are tender.
Step 8
Season with salt and pepper to taste.
Step 9
Serve the curry over the rice.
