Broccoli and Cauliflower Coconut Curry
A tasty and easy Asian curry: broccoli and cauliflower in a creamy coconut curry sauce, served over quinoa.

Ingredients
- 250 g Broccoli
- 250 g Cauliflower
- 100 g Quinoa
- 200 ml Coconut milk
- 100 g Carrots
- 1.5 tsp Curry powder
- 1 tbsp Oil
- 200 ml Water

Instructions
Step 1
Start cooking the quinoa: rinse and cook for 15 minutes in 200ml of water.
Step 2
Cut the broccoli, cauliflower, and carrots into small pieces.
Step 3
Heat the oil in a skillet and toast the curry powder for 1 minute.
Step 4
Add the vegetables and cook for 5 minutes, stirring occasionally.
Step 5
Pour in the coconut milk and simmer for 10-12 minutes until the vegetables are tender.
Step 6
Season with salt and serve the curry over the quinoa.
