Broccoli and Cauliflower Curry
A mild and flavorful Asian curry with broccoli, cauliflower, and coconut milk. Served over a bed of quinoa for a complete and satisfying meal.

Ingredients
- 300 g Broccoli
- 300 g Cauliflower
- 200 g Quinoa
- 400 ml Coconut milk
- 2 tbsp Oil
- 2 tsp Curry powder
- 500 ml Water
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Rinse the quinoa and pour it into a pot with 500 ml of water. Cook for 15 minutes covered.
Step 2
Cut the broccoli and cauliflower into small florets.
Step 3
Heat the oil in a large pan and add the curry powder. Mix for 30 seconds.
Step 4
Add the broccoli and cauliflower. Sauté for 5 minutes, stirring regularly.
Step 5
Pour in the coconut milk and let simmer for 10 minutes over medium heat.
Step 6
Season with salt and pepper. Serve the curry over a bed of hot quinoa.
