Broccoli and Carrot Curry with Potatoes

Ingredients
- 400 g Broccoli
- 300 g Carrots
- 400 g Potatoes
- 1 piece Onion
- 2 clove Garlic
- 2 tsp Curry powder
- 400 ml Coconut milk
- 200 ml Vegetable broth
- 3 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and dice the potatoes, cut the carrots into sticks, break the broccoli into florets. Mince the onion and garlic.
Step 2
Heat the oil in a pan, sauté the onion and garlic for 2 minutes.
Step 3
Add the curry powder and stir well for 1 minute to release the aromas.
Step 4
Add the potatoes and carrots, cook for 8 minutes stirring occasionally.
Step 5
Pour in the coconut milk and broth, season with salt and pepper. Add the broccoli and cook for 8 minutes until tender.
