Curry Broccoli and Asparagus with Eggs
A quick Asian-inspired curry featuring broccoli and asparagus, seasoned with curry powder and creamy coconut milk. Rich and satisfying.

Ingredients
- 200 g Broccoli
- 200 g Asparagus
- 2 piece Eggs
- 15 g Curry powder
- 200 ml Coconut milk
- 200 ml Water
- 20 ml Oil
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Cut the broccoli into florets and the asparagus into chunks.
Step 2
Heat the oil in a pan and add the curry powder, let it infuse for 1 minute.
Step 3
Add the broccoli and asparagus, sauté for 3 minutes.
Step 4
Pour in the coconut milk and water, season with salt and pepper.
Step 5
Simmer for 8 minutes.
Step 6
Make a well in the center, crack the eggs into it, and cook for 2-3 minutes until poached.
