Broccoli and Asparagus Peanut Curry
A savory and spicy Asian curry: broccoli and asparagus in a rich peanut sauce. Served over quinoa, it's hearty and delicious.

Ingredients
- 250 g Broccoli
- 200 g Asparagus
- 100 g Quinoa
- 200 ml Coconut milk
- 50 g Ground peanuts
- 2 tbsp Soy sauce
- 1 tbsp Honey
- 1 tsp Chili powder
- 10 g Fresh ginger
- 1 piece Onion
- 2 tbsp Olive oil
- 150 ml Water
- 1 pinch Salt
Instructions
Step 1
Rinse the quinoa and cook it in 200ml of water with a pinch of salt for 15 minutes. Keep warm.
Step 2
Cut broccoli and asparagus into small pieces, peel and chop the onion and ginger.
Step 3
Sauté onion and ginger in oil in a pan for 2 minutes.
Step 4
Add chili powder, broccoli and asparagus. Cook for 5 minutes, stirring.
Step 5
Pour in coconut milk, ground peanuts, soy sauce, honey and water. Mix and let simmer for 8 minutes.
Step 6
Serve the curry over a bed of quinoa.
