Indian-Style Oat and Vegetable Curry
A rich and flavorful curry made with oat flakes for texture and coconut milk. A comforting and original dish.

Ingredients
- 150 g Oat flakes
- 300 g Carrots
- 150 g Celery
- 2 tbsp Curry powder
- 400 ml Coconut milk
- 300 ml Water
- 1 piece Onion
- 2 tbsp Oil
- à volonté Salt
- à volonté Pepper
Instructions
Step 1
Finely mince the onion, cut the carrots and celery into dice.
Step 2
Heat the oil in a pot and sauté the onion for 2 minutes, then add the curry powder and mix well.
Step 3
Add the carrots and celery, sauté for 3 minutes, then pour in the coconut milk and water.
Step 4
Simmer covered for 15 minutes until the vegetables are tender.
Step 5
Stir in the oat flakes and mix well, cook for 3 minutes until thickened.
Step 6
Season with salt and pepper, then serve hot.
