Oat and Carrot Curry
A savory vegetarian Indian curry made with oats, full of warmth and comfort. A simplified version of dal perfect for everyday cooking.

Ingredients
- 150 g Oat flakes
- 3 piece Carrots
- 1 tsp Curry powder
- 400 ml Water
- 1 tbsp Butter
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the carrots into small dice.
Step 2
Melt the butter in a saucepan and add the curry powder.
Step 3
Add the carrots and sauté for 3 minutes, stirring occasionally.
Step 4
Pour in the water and bring to a boil.
Step 5
Add the oat flakes and reduce heat.
Step 6
Simmer for 10-12 minutes until the carrots are tender and the mixture is creamy.
Step 7
Season with salt and pepper to taste.
