Oat Curry with Vegetables and Coconut Milk
A comforting vegetarian curry with oat flakes as a textured base, coconut milk, and vegetables. Exotic and nourishing in 30 minutes.

Ingredients
- 80 g Oat flakes
- 400 ml Coconut milk
- 60 g Olives
- 1 piece Onion
- 2 tsp Curry powder
- 2 tbsp Oil
- 2 clove Garlic
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Mince the onion and garlic.
Step 2
Heat the oil in a pot and sauté the onion and garlic.
Step 3
Add the curry powder and cook for 1 minute to release the aromas.
Step 4
Pour in the coconut milk and stir.
Step 5
Add the oat flakes gradually while stirring.
Step 6
Add the olives and simmer for 10 minutes on low heat.
Step 7
Season with salt and pepper, serve hot.
