Oat Curry with Carrots and Celery
A creamy vegetarian Indian curry made with oat flakes that thicken the broth, topped with fresh vegetables.

Ingredients
- 80 g Oat flakes
- 2 piece Carrots
- 2 branches Celery stalks
- 2 tsp Curry powder
- 400 ml Water
- 1 tbsp Butter
- 0.5 tsp Salt
- 1 pinch Black pepper
Instructions
Step 1
Cut the carrots into small dice and chop the celery into small pieces.
Step 2
Melt the butter in a pot, add the curry powder and let it cook for 1 minute.
Step 3
Add the carrots and celery, sauté for 3 minutes while stirring.
Step 4
Pour in the water and bring to a boil. Add the oat flakes gradually while stirring continuously to avoid lumps.
Step 5
Simmer for 15-18 minutes until the vegetables are tender and the curry has thickened. Season with salt and pepper to taste.
