Asparagus and Apple Curry with Quinoa
A light and delicious Asian-inspired curry combining tender asparagus, sweet apples, and fluffy quinoa. Exotic and nutritious, ready in 30 minutes.

Ingredients
- 250 g Asparagus
- 2 piece Apples
- 150 g Quinoa
- 200 ml Coconut milk
- 300 ml Water
- 2 tbsp Red curry paste
- 1 piece Onion
- 2 tbsp Oil
- 1 pinch Salt
Instructions
Step 1
Cook the quinoa in salted water according to package directions (about 15 minutes).
Step 2
Peel and finely chop the onion. Heat the oil in a pot and sauté the onion.
Step 3
Add the curry paste, mix well, and pour in the coconut milk.
Step 4
Cut the asparagus into pieces and peel and chop the apples. Add them to the curry.
Step 5
Simmer for 10 minutes. Serve the curry over a bed of quinoa.
