Curry Asparagus Spinach Coconut
A light Asian-style curry with tender asparagus, spinach, and coconut milk. Flavorful and subtly spiced, served over rice.

Ingredients
- 300 g Asparagus
- 250 g Spinach
- 400 ml Coconut milk
- 2 tsp Curry powder
- 1 piece Onion
- 2 cloves Garlic
- 2 tbsp Oil
- 200 g White rice
- 1 pinch Salt
Instructions
Step 1
Cook the rice according to package instructions. Set aside.
Step 2
Dice the onion and mince the garlic. Sauté in hot oil for 2 minutes.
Step 3
Add the curry powder and stir for 1 minute.
Step 4
Pour in the coconut milk, cut the asparagus into pieces, and add them. Simmer for 10 minutes.
Step 5
Add the spinach and cook for 3 minutes until wilted. Season with salt.
Step 6
Serve over the rice.
