Asian Quinoa and Vegetable Curry
A flavorful curry with whatever vegetables you have on hand and quinoa, enriched with fragrant spices and creamy coconut milk.

Ingredients
- 100 g Quinoa
- 200 g Carrots
- 150 g Broccoli
- 250 ml Coconut milk
- 2 tbsp Olive oil
- 1.5 tsp Curry powder
- 200 ml Water
- à volonté pinch Salt
- à volonté pinch Pepper
Instructions
Step 1
Rinse the quinoa and cook in 200 ml salted water for 15 minutes.
Step 2
Peel and cut carrots into batons. Cut broccoli into small florets.
Step 3
Heat oil in a skillet. Add curry powder and cook for 1 minute.
Step 4
Add carrots and broccoli. Sauté for 3 minutes, stirring occasionally.
Step 5
Pour in coconut milk, reduce heat, and simmer for 10 minutes.
Step 6
Season with salt and pepper. Serve the curry over the quinoa.
