Thai Green Chicken Curry with Broccoli and Rice
A savory and spiced Thai curry where tender chicken simmers in a rich coconut curry sauce. Served over fluffy white rice.

Ingredients
- 500 g Chicken
- 300 g Broccoli
- 250 g White rice
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 1 piece Onion
- 2 clove Garlic
- 2 tbsp Oil
- à volonté pinch Salt
- 500 ml Water
Instructions
Step 1
Cook the rice according to package directions (approximately 15 minutes).
Step 2
Cut the chicken into bite-sized pieces. Mince the onion and garlic.
Step 3
Heat oil in a pan or pot. Sauté the onion and garlic for 2 minutes.
Step 4
Add the curry paste and stir well for 1 minute.
Step 5
Add the chicken and sauté over high heat for 5 minutes.
Step 6
Pour in the coconut milk and water. Add the broccoli and simmer for 8 minutes.
Step 7
Season with salt to taste. Serve over hot rice.
