Asian Chicken and Broccoli Curry with Rice
A delicious and easy curry featuring chicken, broccoli, and onions. Served with white rice, it's an everyday Asian meal packed with flavor.

Ingredients
- 350 g Chicken
- 250 g Broccoli
- 200 g White rice
- 1 piece Onion
- 200 ml Coconut milk
- 2 tbsp Red curry paste
- 1 tbsp Soy sauce
- 2 tbsp Olive oil
- 500 ml Water
- 0.5 tsp Salt
Instructions
Step 1
Start cooking the rice according to package instructions (about 15 minutes).
Step 2
Cut the chicken into cubes. Mince the onion. Cut the broccoli into small florets.
Step 3
Heat the oil in a skillet. Add the onion and chicken, cook for 5 minutes over medium-high heat.
Step 4
Add the curry paste and stir well. Pour in the coconut milk and water, add the broccoli.
Step 5
Simmer for 8 minutes. Add the soy sauce and salt. Taste and adjust seasoning as needed.
Step 6
Serve the curry over white rice.
