Light Asian Chicken and Vegetable Curry
A mild and flavorful curry loaded with vegetables, served over rice. Authentic and comforting, ready in under 35 minutes.

Ingredients
- 300 g Chicken
- 200 g Carrots
- 200 g Broccoli
- 250 g White rice
- 200 ml Coconut milk
- 2 tbsp Olive oil
- 2 tsp Curry powder
- 500 ml Water
- 1 pinch Salt
- 1 pinch Pepper
- 1 tsp Fresh ginger
- 1 clove Garlic
Instructions
Step 1
Cook the rice in a pot with salted water according to package directions (approximately 15-18 minutes).
Step 2
Cut the chicken into cubes and cut the vegetables into regular-sized pieces. Mince the garlic and ginger.
Step 3
Heat the oil in a pan and brown the chicken for 4 minutes.
Step 4
Add the garlic, ginger, and curry powder, cook for 1 minute.
Step 5
Add the carrots and cook for 5 minutes.
Step 6
Add the broccoli, coconut milk, and water. Simmer for 10 minutes.
Step 7
Season with salt and pepper. Serve the curry over the rice.
