Asian Curry of Potatoes and Carrots
A flavorful curry inspired by Asian cuisine combining tender vegetables and creamy spiced sauce for a comforting and exotic dish.

Ingredients
- 500 g Potatoes
- 300 g Carrots
- 20 g Flour
- 25 g Sugar
- 60 ml Oil
- 400 ml Water
- 5 g Salt
- 2 g Pepper
- 15 g Curry
- 200 ml Coconut milk
- 2 clove Garlic
- 10 g Ginger
Instructions
Step 1
Peel and cut the potatoes and carrots into even cubes.
Step 2
Finely mince the garlic and ginger.
Step 3
Heat the oil in a saucepan and sauté the garlic and ginger.
Step 4
Add the curry powder and cook for 1 minute.
Step 5
Add the potatoes and carrots, coat well.
Step 6
Pour in the water and coconut milk, bring to a boil.
Step 7
Reduce heat and simmer for 20 minutes until tender.
Step 8
Mix the flour with a little cold water and add to thicken.
Step 9
Season with sugar, salt and pepper, serve hot.
