Asian Curry with Potatoes and Broccoli in Coconut Milk

Ingredients
- 600 g Potato
- 400 g Broccoli
- 400 ml Coconut milk
- 30 ml Oil
- 3 clove Garlic
- 15 g Ginger
- 5 g Turmeric
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Peel and cut the potatoes into 2cm cubes
Step 2
Mince the garlic and ginger finely
Step 3
Sauté the garlic and ginger in hot oil for 2 minutes
Step 4
Add the potatoes, sprinkle with turmeric and cook covered for 12 minutes
Step 5
Add the broccoli and coconut milk, then cook for 10 more minutes
Step 6
Season with salt and pepper, then serve hot
