Asian Curry with Potatoes and Broccoli
A spicy Asian-inspired curry where potatoes and broccoli bathe in a creamy, flavorful coconut milk sauce.

Ingredients
- 500 g Potato
- 350 g Broccoli
- 400 ml Coconut milk
- 30 ml Oil
- 5 g Salt
- 2 g Pepper
- 2 g Turmeric
- 5 g Ginger
- 200 ml Water
Instructions
Step 1
Cut the potatoes into cubes and the broccoli into small florets.
Step 2
Heat the oil in a skillet and add the turmeric and ginger for 1 minute to infuse.
Step 3
Add the potatoes and cook for 10 minutes, stirring regularly.
Step 4
Pour in the coconut milk and water, then add the broccoli. Simmer for 12 minutes.
Step 5
Season with salt and pepper to taste. Serve hot.
