Asian Vegetable and Ham Curry
A simple and indulgent Thai curry with asparagus, broccoli, and spinach. Add ham for extra flavor and serve over white rice.

Ingredients
- 200 g Asparagus
- 200 g Broccoli
- 150 g Spinach
- 150 g Ham
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 200 g White rice
- 1 tbsp Oil
- à volonté Salt
- à volonté Pepper
Instructions
Step 1
Cook the white rice according to package instructions (approximately 15 minutes).
Step 2
Cut the asparagus into pieces and broccoli into small florets. Cut the ham into dice.
Step 3
Heat the oil in a large pot or pan and add the curry paste. Stir for 1 minute.
Step 4
Pour in the coconut milk and mix well to dissolve the paste.
Step 5
Add the asparagus and broccoli, let cook for 8 minutes.
Step 6
Add the spinach and ham, cook for 3 more minutes. Season with salt and pepper.
Step 7
Serve the curry over white rice.
