Asian Vegetable Curry with Lentils and Coconut Milk
A savory and creamy curry made with vegetables and a touch of exotic flavor. A comforting dish to enjoy with plain rice.

Ingredients
- 200 g Lentils
- 300 g Potatoes
- 2 piece Carrots
- 150 g Spinach
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 1 piece Onion
- 2 clove Garlic
- 1 tsp Ginger
- 2 tbsp Olive oil
- à volonté g Salt
- à volonté g Pepper
Instructions
Step 1
Peel and cut potatoes into cubes, carrots into sticks. Slice the onion, mince the garlic and ginger.
Step 2
Heat the oil in a pan and sauté the onion, garlic and ginger for 2 minutes.
Step 3
Add the curry paste and mix well for 1 minute.
Step 4
Add the potatoes, carrots and lentils. Let cook for 10 minutes.
Step 5
Pour the coconut milk and simmer for 10 more minutes until the vegetables are tender.
Step 6
Add the fresh spinach and mix. Season with salt and pepper to taste.
Step 7
Serve hot with white or basmati rice.
