Asian Curry with Carrots and Potatoes

Ingredients
- 400 g Carrots
- 400 g Potatoes
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
- 200 ml Water
Instructions
Step 1
Peel and cut the carrots and potatoes into cubes.
Step 2
Heat the oil in a pot and cook the curry paste for 1 minute.
Step 3
Add the carrots and potatoes, coating them well with the curry paste.
Step 4
Pour in the coconut milk and water, stir and simmer for 20 minutes.
Step 5
Season with salt and pepper to taste. Serve hot.
