Asian Curry with Broccoli, Kiwis and Cashews
An original Asian fusion curry combining crispy broccoli, sweet and tangy kiwis and crunchy cashews in a spicy coconut curry sauce. A surprising and delicious dish.

Ingredients
- 400 g Broccoli
- 3 piece Kiwis
- 60 g Walnuts
- 80 g Cashews
- 400 ml Coconut milk
- 15 g Whole grain mustard
- 15 g Red curry paste
- 15 g Fresh ginger
- 2 clove Garlic
- 30 ml Soy sauce
- 20 g Honey
- 40 ml Oil
- 3 g Salt
- 1 g Pepper
Instructions
Step 1
Cut the broccoli into small florets and peel the kiwis.
Step 2
Thinly mince the garlic and fresh ginger.
Step 3
Heat the oil in a skillet and sauté the garlic and ginger for 2 minutes.
Step 4
Add the red curry paste and mustard, stir for 1 minute.
Step 5
Pour in the coconut milk and soy sauce, bring to a simmer.
Step 6
Add the broccoli and cook for 12 minutes until tender.
Step 7
Add the diced kiwis, crushed nuts and honey.
Step 8
Adjust the seasoning and serve hot over white rice.
