Asian Curry with Carrots, Potatoes and Coconut Milk

Ingredients
- 500 g potato
- 400 g carrot
- 400 ml coconut milk
- 30 g red curry paste
- 150 g onion
- 15 g garlic
- 10 g fresh ginger
- 30 ml oil
- 4 g salt
- 1 unité lime
Instructions
Step 1
Cut potatoes into cubes, carrots into sticks, onion into rings, and mince garlic and ginger
Step 2
Sauté the onion, garlic and ginger in hot oil for 2 minutes
Step 3
Add the red curry paste and stir for 1 minute to release the aromas
Step 4
Add the potatoes and carrots, mix well
Step 5
Pour in the coconut milk, season with salt and bring to a boil
Step 6
Reduce heat and simmer for 18 minutes until vegetables are tender
Step 7
Finish with a splash of fresh lime juice and serve
