Asian Curry with Chicken and Vegetables
A rich and flavorful curry in Thai style with a generous sauce. Served with white rice, it's a complete and satisfying meal.
Ingredients
- 400 g Chicken
- 2 piece Carrots
- 250 g Broccoli
- 3 tsp Curry
- 200 ml Coconut milk
- 1 piece Onion
- 2 clove Garlic
- 2 tbsp Oil
- 1 pinch Salt
- 200 g White rice
Instructions
Step 1
Start cooking the white rice in water according to package directions.
Step 2
Cut the chicken into cubes, the carrots into sticks, and the broccoli into florets. Mince the onion and garlic.
Step 3
Heat the oil in the skillet and sauté the onion and garlic for 2 minutes.
Step 4
Add the diced chicken and cook for 5 minutes over medium-high heat until browned.
Step 5
Sprinkle the curry powder and stir for 1 minute to incorporate it well.
Step 6
Pour in the coconut milk, add the carrots and broccoli. Season lightly with salt and simmer for 10 minutes.
Step 7
Serve the hot curry over the cooked white rice.
