Asian Curry with Broccoli, Chicken and Coconut Milk
A simple yet flavorful Thai curry: tender chicken in a rich, spiced coconut sauce with fresh broccoli. Served over rice.

Ingredients
- 400 g Chicken
- 300 g Broccoli
- 2 tsp Curry powder
- 400 ml Coconut milk
- 1 piece Onion
- 250 g White rice
- 2 tbsp Oil
- 1 pinch Salt
- 2 l Water
Instructions
Step 1
Cook the rice according to package instructions (approximately 15-18 minutes).
Step 2
Meanwhile, dice the chicken and finely chop the onion. Cut the broccoli into small florets.
Step 3
Heat the oil in a skillet and sauté the onion for 2 minutes, then add the chicken.
Step 4
Once the chicken is golden, add the curry powder and stir well for 1 minute.
Step 5
Pour in the coconut milk and add the broccoli. Simmer over medium heat for 8 minutes.
Step 6
Season with salt to taste and serve the curry over hot rice.
