Iberian Ham Croquetas
Spanish croquettes with Iberian ham and Manchego cheese. Golden, crispy on the outside and creamy inside.

Ingredients
- 60 g Butter
- 60 g Flour
- 300 ml Hot milk
- 150 g Iberian bacon
- 100 g Grated Manchego cheese
- 2 pieces Eggs
- 150 g Breadcrumbs
- 600 ml Sunflower oil
- à goût g Salt and pepper
- une pincée g Nutmeg
Instructions
Step 1
Sauté the finely diced Iberian bacon until crispy. Drain and set aside.
Step 2
Make a roux: cook the butter and flour together for 2 minutes while stirring. Gradually pour in the hot milk.
Step 3
Add the grated cheese and bacon. Season with salt, pepper, and nutmeg. Spread onto a baking sheet and cool.
Step 4
Form into cylinders, dip in beaten eggs then in breadcrumbs. Refrigerate for 30 minutes.
Step 5
Heat the oil to 180°C and fry the croquetas for 3-4 minutes until golden. Drain and serve hot.
