Sichuan Chili Shrimp
Stir-fried shrimp with fiery Sichuan chili sauce, Sichuan peppercorn with its tingly sensation, garlic, and fresh red chili heat.

Ingredients
- 400 g Shrimp
- 1 tsp Sichuan peppercorn
- 2 piece Fresh red chili
- 5 clove Garlic
- 10 g Fresh ginger
- 2 tbsp Soy sauce
- 1 tbsp Rice vinegar
- 2 tbsp Sunflower oil
- 0.5 tsp Sugar
- 30 g White scallion
Instructions
Step 1
Pat the shrimp dry with paper towels, season lightly with salt.
Step 2
Finely mince the red chilis, garlic, and ginger.
Step 3
Heat the oil in a very hot wok, sear the shrimp for 2 minutes. Remove.
Step 4
In the same wok, sauté the garlic, ginger, and Sichuan peppercorn for 30 seconds.
Step 5
Add the fresh red chilis, cook for 1 minute, then return the shrimp.
Step 6
Pour in soy sauce, vinegar, and sugar. Toss for 1 minute.
Step 7
Add the sliced white scallion, serve immediately with rice.
