Greek-Style Shrimp and Roasted Eggplant
Shrimp baked with tender eggplant, crumbled feta and tomatoes. A sunny Mediterranean Greek-inspired dish.

Ingredients
- 300 g peeled shrimp
- 1 piece eggplant
- 2 pieces tomatoes
- 60 g feta
- 2 tbsp olive oil
- 1 tsp dried oregano
Instructions
Step 1
Preheat the oven to 200°C. Cut the eggplant into cubes and the tomatoes into quarters.
Step 2
Arrange the eggplant on a baking sheet, drizzle with olive oil and bake for 10 minutes.
Step 3
Add the tomatoes, shrimp and oregano. Crumble the feta over the top and bake for 8 minutes.
Step 4
Serve directly in the baking dish, hot.
