Savory Breton Crêpes with Tomatoes and Gruyère

Ingredients
- 4 piece Breton crêpes
- 200 ml Tomato sauce
- 60 g Gruyère
- 2 piece Eggs
- 20 g Butter
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Heat a skillet with butter and place a crêpe in it.
Step 2
Spread 2 tablespoons of tomato sauce over the crêpe and let it heat for 30 seconds.
Step 3
Sprinkle grated Gruyère over the tomato sauce.
Step 4
Crack an egg in the center and cook for 3-4 minutes until the whites are set.
Step 5
Fold the crêpe into quarters and transfer to a plate.
Step 6
Repeat with the second crêpe and second egg.
