Breton Crêpes with Avocado and Tomato

Ingredients
- 2 piece Breton crêpes
- 1 piece Avocados
- 1 piece Tomatoes
- 0.5 piece Lemon
- 1 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
Step 2
Mash the avocado with a fork along with a splash of olive oil, salt, pepper, and fresh lemon juice.
Step 3
Cut the tomato into small dice.
Step 4
Quickly warm the crêpes in a pan for 2 minutes.
Step 5
Fill each crêpe with the mashed avocado and diced tomato, roll or fold, and serve immediately.
