Sardine, Tomato and Olive Egg Crepe
A thin omelette rolled around grilled sardines, cherry tomatoes, and black olives—a rustic Italian wrap packed with omega-3s.

Ingredients
- 250 g fresh sardines
- 4 piece eggs
- 150 g cherry tomatoes
- 50 g black olives
- 2 tbsp olive oil
- 1 bunch fresh basil
Instructions
Step 1
Beat the eggs, salt lightly. Cook 2 thin crepes in an oiled skillet, 2 minutes per side.
Step 2
Grill the sardines for 3 minutes on each side in a skillet with a drizzle of olive oil.
Step 3
Halve the cherry tomatoes and slice the olives into rings.
Step 4
Fill each crepe with sardines, tomatoes, olives, and fresh basil. Roll tightly and serve.
