Apple and Lentil Compote with Ginger

Ingredients
- 4 piece Apples
- 300 g Cooked lentils (canned)
- 3 tbsp Honey
- 1 tbsp Fresh ginger
- 2 tbsp Lemon juice
- 1 tsp Cinnamon
- 100 ml Water
Instructions
Step 1
Peel the apples, remove the cores, and cut them into pieces.
Step 2
Finely grate the fresh ginger.
Step 3
In a saucepan, combine the water, honey, and lemon juice. Heat over medium heat.
Step 4
Add the apples, ginger, and cinnamon. Simmer for 12-15 minutes until the apples are tender.
Step 5
Stir in the cooked lentils gently. Cook for an additional 3 minutes.
Step 6
Pour into bowls and serve warm or chilled, as you prefer.
