Savory Vegetable and Cheese Clafoutis
A creative take on the classic French clafoutis: a light and flavorful baked custard with broccoli, cauliflower and potatoes, enriched with fresh cheese and herbs.

Ingredients
- 250 g Broccoli
- 250 g Cauliflower
- 150 g Potato
- 250 ml Coconut milk
- 4 piece Eggs
- 150 g Fresh cheese
- 80 g Flour
- 50 g Butter
- 5 g Salt
- 3 g Pepper
- 5 g Fresh thyme
- 10 ml Mustard
Instructions
Step 1
Cook the vegetables separately for 8 minutes in salted boiling water.
Step 2
Drain and arrange the vegetables in a buttered baking dish.
Step 3
Prepare the batter: mix the eggs, flour and coconut milk.
Step 4
Fold in the fresh cheese, mustard, thyme and seasoning.
Step 5
Pour the batter over the vegetables.
Step 6
Bake at 190°C for 25 minutes until golden.
