Vegetable and Tofu Chow Mein
Rice noodles stir-fried with crispy tofu, broccoli, mushrooms, and garlic-ginger sauce.

Ingredients
- 250 g Rice noodles
- 300 g Extra-firm tofu
- 250 g Broccoli
- 150 g Button mushrooms
- 1 piece White onion
- 4 clove Garlic
- 15 g Fresh ginger
- 3 tbsp Soy sauce
- 4 tbsp Peanut oil
- 100 ml Water or vegetable broth
Instructions
Step 1
Cook the rice noodles according to instructions, drain, and set aside.
Step 2
Cut the tofu into 2cm cubes, mince the garlic and ginger, and cut the broccoli into small florets.
Step 3
Heat 2 tbsp of oil in a wok and brown the tofu on all sides, then set aside.
Step 4
Add the remaining oil and stir-fry the garlic and ginger for 30 seconds.
Step 5
Add the broccoli, mushrooms, and onion, and cook for 4 minutes over high heat.
Step 6
Add the rice noodles and tofu, pour in the soy sauce and water.
Step 7
Toss gently and cook for 2 minutes until everything is heated through.
