Dark Chocolate Fondant with Oranges and Crispy Quinoa
A sophisticated dessert combining a dark chocolate fondant with a hint of orange, accompanied by a crunchy roasted quinoa base.
Ingredients
- 200 g Dark Chocolate
- 2 piece Oranges
- 100 g Quinoa
- 3 piece Eggs
- 100 g Butter
- 80 g Sugar
- 100 ml Milk
- 2 tbsp Oil
- 0.5 tsp Salt
- 2 tbsp Honey
Instructions
Step 1
Cook the quinoa according to package directions (12-15 minutes). Spread on a baking sheet with a bit of oil and 1 tbsp of honey. Roast in the oven for 8 minutes at 180°C until crispy.
Step 2
Meanwhile, zest one orange and juice both oranges. Set aside.
Step 3
Melt the chocolate and butter in a double boiler with the milk. Add the orange zest and mix.
Step 4
Whisk the eggs with sugar until pale (5 minutes). Gently fold in the chocolate mixture.
Step 5
Pour into buttered individual molds. Bake for 12-15 minutes at 180°C (the center should remain slightly runny).
Step 6
Unmold onto a plate, scatter with crispy quinoa, and serve with a drizzle of orange juice.
