Dark Chocolate Lava Cake with Crispy Quinoa and Orange Zest
A gourmet dessert combining a rich chocolate lava cake with the delightful crunch of caramelized quinoa and bright citrus notes.
Ingredients
- 200 g 70% dark chocolate
- 60 g Quinoa
- 2 piece Oranges
- 100 ml Coconut milk
- 80 g Butter
- 80 g Sugar
- 3 piece Eggs
- 40 g Flour
- 30 g Honey
- 2 g Salt
Instructions
Step 1
Cook the quinoa in 150ml of water for 12 minutes, then dry it in the oven for 8 minutes at 180°C.
Step 2
Caramelize the dried quinoa with 20g of sugar in a skillet for 4 minutes.
Step 3
Zest 2 oranges and juice 1 orange.
Step 4
Melt the chocolate with the butter in a double boiler.
Step 5
Whisk the eggs with the remaining sugar and honey until pale.
Step 6
Gently fold in the melted chocolate, then the flour and zests.
Step 7
Pour half of the mixture into buttered ramekins.
Step 8
Top with the crispy quinoa and cover with the remaining mixture.
Step 9
Bake at 190°C for 12 minutes (the center should remain runny).
Step 10
Let rest for 2 minutes and serve warm with a drizzle of coconut milk.
