Beet and Potato Chips with Mustard and Herb Dipping Sauce
Homemade crispy and colorful chips served with a tangy dipping sauce made from mustard and yogurt. A gourmet French appetizer.

Ingredients
- 400 g Potatoes
- 250 g Beet
- 4 tbsp Olive oil
- 2 tbsp Mustard
- 150 g Plain yogurt
- 1 clove Garlic
- 1 bunch Fresh parsley
- 1.5 tsp Salt
- 0.5 tsp Pepper
Instructions
Step 1
Preheat the oven to 220°C.
Step 2
Peel and thinly slice potatoes and beets using a mandoline.
Step 3
Dry the slices with paper towels.
Step 4
Mix the oil with salt and pepper, brush the slices on both sides.
Step 5
Spread on a baking sheet without overlapping and bake 25-30 minutes until golden and crispy.
Step 6
Meanwhile, prepare the sauce: mix yogurt, mustard, minced garlic, and chopped parsley.
Step 7
Season the sauce and serve with the chips while still hot.
