Smoked Chicken Carpaccio with Marinated Zucchini
Thin slices of smoked chicken arranged over a bed of lemon-marinated zucchini, topped with Parmesan shavings and arugula. An elegant and light Italian appetizer.

Ingredients
- 200 g thinly sliced smoked chicken
- 1 piece zucchini
- 60 g arugula
- 30 g Parmesan
- 1 piece lemon
- 2 tbsp olive oil
- 1 pinch fleur de sel
Instructions
Step 1
Slice the zucchini into very thin ribbons on a mandoline. Place in a dish and drizzle with lemon juice and 1 tablespoon olive oil. Let marinate for 10 minutes.
Step 2
Arrange the smoked chicken slices on two plates, spreading them out thinly. Top with the marinated zucchini ribbons.
Step 3
Garnish with arugula, Parmesan shavings, and a drizzle of olive oil. Sprinkle with fleur de sel and serve chilled.
