Roasted Carrots and Pan-Fried Lentils
A simple and healthy dish combining caramelized roasted carrots with well-seasoned lentils. Can be served hot or warm.

Ingredients
- 400 g Carrots
- 150 g Red lentils
- 400 ml Water
- 2 tbsp Olive oil
- 1 tsp Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut the carrots into sticks or rounds.
Step 2
Place the carrots on a baking sheet, drizzle with olive oil, salt and pepper.
Step 3
Bake at 200°C for 20 minutes.
Step 4
Meanwhile, cook the lentils in boiling salted water for 15 minutes.
Step 5
Drain the lentils and mix with the roasted carrots.
Step 6
Season to taste and serve hot.
