Heirloom Tomato and Buffalo Mozzarella Caprese

Ingredients
- 400 g heirloom tomatoes
- 250 g buffalo mozzarella
- 1 bunch fresh basil
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1 pinch fleur de sel
Instructions
Step 1
Slice the heirloom tomatoes into thick rounds. Tear the mozzarella into generous pieces.
Step 2
Alternate the tomato slices and mozzarella pieces on two plates.
Step 3
Scatter basil leaves over the top, drizzle with olive oil and balsamic vinegar, and finish with a sprinkle of fleur de sel.
