Duck with Roasted Peanuts
A savory Chinese dish where tender duck is coated in a roasted peanut sauce with crispy vegetables.

Ingredients
- 300 g duck breast
- 80 g unsalted roasted peanuts
- 1 piece red bell pepper
- 1 piece yellow bell pepper
- 200 g broccoli
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 2 clove garlic
- 10 g ginger
- 2 tbsp oil
- 200 g jasmine rice
Instructions
Step 1
Cook the jasmine rice according to package instructions.
Step 2
Slice the duck thinly. Heat the oil in a wok and cook the duck until medium-rare. Set aside.
Step 3
Stir-fry the garlic and ginger. Add the bell peppers and broccoli, cook for 5 minutes.
Step 4
Coarsely crush the peanuts. Mix soy sauce, vinegar, and honey. Pour over the vegetables.
Step 5
Return the duck, add the peanuts, and cook for 3 minutes more.
Step 6
Serve over the rice.
