Caribbean Callaloo
Local greens (or spinach) sautéed with coconut, onions and spices. A hearty and flavorful vegetarian dish from the Caribbean.

Ingredients
- 500 g Fresh spinach
- 200 ml Coconut milk
- 1 piece White onion
- 3 clove Garlic
- 5 g Thyme
- 1 piece Scotch bonnet pepper
- 30 ml Olive oil
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Sauté sliced onion and garlic in oil for 2 minutes
Step 2
Add washed spinach and whole pepper
Step 3
Cook for 5 minutes, stirring
Step 4
Add coconut milk and thyme
Step 5
Simmer gently for 8 minutes
Step 6
Season and serve hot
