Roasted Cod with Cherry Tomatoes and Zucchini
Cod fillets baked on a bed of cherry tomatoes and tender zucchini, flavored with Herbes de Provence.

Ingredients
- 2 piece cod fillet
- 250 g cherry tomatoes
- 2 piece zucchini
- 1 tbsp Herbes de Provence
- 2 tbsp olive oil
- 1 pinch salt and pepper
Instructions
Step 1
Preheat oven to 190°C. Slice the zucchini into rounds and halve the cherry tomatoes.
Step 2
Arrange the vegetables on a baking sheet, drizzle with olive oil, sprinkle with Herbes de Provence, season with salt and pepper. Bake for 10 minutes.
Step 3
Place the cod fillets on the vegetables, season with salt and pepper. Return to oven for 10 minutes until the fish is opaque and flakes easily.
