Buddha Bowl with Roasted Quinoa, Cashews, and Clementines
A complete bowl featuring quinoa, roasted vegetables, cashews, and fresh clementines. Healthy and indulgent at the same time, with a curry-honey vinaigrette.

Ingredients
- 100 g Quinoa
- 150 g Carrots
- 150 g Cauliflower
- 60 g Cashews
- 2 pieces Clementines
- 3 tbsp Olive oil
- 0.5 tsp Curry
- 1 tbsp Honey
- 1 tbsp White vinegar
- à volonté Salt
- à volonté Pepper
Instructions
Step 1
Cook the quinoa according to package instructions (about 15 minutes). Set aside.
Step 2
Cut the carrots and cauliflower into pieces. Toss with 1 tbsp oil, salt, and pepper.
Step 3
Spread on a baking sheet and roast at 200°C for 20 minutes.
Step 4
Prepare the vinaigrette: mix 2 tbsp olive oil, curry, honey, and white vinegar.
Step 5
Assemble the bowls: quinoa, roasted vegetables, cashews, peeled clementines. Drizzle with vinaigrette.
