Halloumi and Eggplant Skewers, Lebanese Style
Skewers alternating golden halloumi and tender eggplant, seasoned with zaatar and served with fresh tomatoes. A simple taste of the Levant.

Ingredients
- 200 g halloumi
- 1 piece eggplant
- 2 piece tomatoes
- 2 tsp zaatar
- 2 tbsp olive oil
- 1 tbsp lemon juice
Instructions
Step 1
Cut the halloumi and eggplant into 2 cm cubes. Cut the tomatoes into quarters.
Step 2
Brush the eggplant and halloumi cubes with olive oil. Generously sprinkle with zaatar.
Step 3
Thread alternately onto skewers. Grill on a hot grill for 5-6 minutes per side until golden.
Step 4
Serve with fresh tomato quarters, drizzled with lemon juice and a drizzle of olive oil.
