Thai Shrimp and Grilled Bok Choy Skewers
Shrimp skewers marinated in coconut milk and red curry, served with grilled bok choy. A taste of Thailand in less than 25 minutes.

Ingredients
- 300 g tiger shrimp
- 3 piece bok choy
- 50 ml coconut milk
- 1 tbsp red curry paste
- 1 piece zucchini
- 1 piece lime
Instructions
Step 1
Mix the coconut milk and red curry paste. Marinate the shrimp in it for 5 minutes.
Step 2
Cut the bok choy in half lengthwise and slice the zucchini into thick rounds.
Step 3
Thread the shrimp onto skewers. Grill for 2 to 3 minutes on each side.
Step 4
Grill the bok choy and zucchini for 3 minutes on each side. Drizzle with lime juice and serve.
