Crispy Egg and Cheese Brik
Delicate Tunisian crispy pastry filled with egg and fresh cheese. A savory classic enjoyed as an appetizer or light meal.

Ingredients
- 2 sheets Brik pastry
- 2 pieces Egg
- 100 g Ricotta or fresh cheese
- 2 stems Green onion
- 5 leaves Fresh mint
- 300 ml Oil for frying
- au goût Salt and pepper
- 1 tsp Harissa
Instructions
Step 1
Mix the ricotta with chopped green onions and fresh mint.
Step 2
Add a pinch of salt and pepper to the mixture.
Step 3
Place the mixture in the center of a brik sheet and create a well in the center.
Step 4
Crack the egg into the well and add a little harissa.
Step 5
Fold the brik sheet into a triangle, sealing the edges well.
Step 6
Fry at 180°C for 4 minutes on each side until crispy and golden.
Step 7
Drain on paper towels and serve hot.
