Brik with Egg
A crispy Tunisian appetizer: a triangle of phyllo pastry filled with egg, potato and herbs, fried until golden.

Ingredients
- 4 sheets Phyllo sheets
- 4 pieces Eggs
- 1 piece Potato
- 0.5 piece Onion
- 30 g Fresh parsley
- 10 g Fresh mint
- 1 tsp Harissa
- 400 ml Sunflower oil
- à goût pinch Salt
- à goût pinch Pepper
Instructions
Step 1
Cook the potato in salted water, peel it and cut into small cubes.
Step 2
Finely chop the onion, parsley and mint. Mix with the potato and harissa.
Step 3
Place a phyllo sheet on the work surface and put an egg in the center with a spoonful of filling.
Step 4
Fold the sheet into a triangle, sealing the edges with a bit of water.
Step 5
Heat the oil to 175°C and fry the briks for 3 minutes per side until golden.
Step 6
Drain on paper towels and serve hot.
