Scandinavian Bowl with Eggs and Edamame on Kale

Ingredients
- 4 piece Eggs
- 150 g Kale
- 100 g Shelled edamame
- 20 g Pumpkin seeds
- 1 piece Lemon
- 1 tbsp Olive oil
Instructions
Step 1
Bring a pot of water to a boil, cook the eggs for 10 minutes for hard-boiled eggs. Cool under cold water and peel.
Step 2
Wash the kale, remove the tough stems, and massage for 2 minutes with the lemon juice and olive oil to tenderize.
Step 3
Divide the kale between two bowls. Add the edamame and eggs cut into quarters.
Step 4
Top with pumpkin seeds and serve.
